9 heaping tablespoons cornmeal (better to get the self rising and does just as well)
1 tablespoon flour
1 egg
1/4 cup oil (bacon grease if you have it)
1 teaspoon sugar
Mix all the above with buttermilk until you have a pourable mixture (usually about 1 1/2 cups) mixture. You don't want it to thin but most people have it much to think when they go bake it.
Use a cast iron skillet if at all possible. Cover bottom with oil (or bacon grease) and heat on top of stove until smoking hot. Pour cornbread mix into the pan (you will hear it sizzle- this is making a nice brown crust on the bottom) then pop it into your 350 degree preheat oven right away. 25 minutes later you'll have some of the best cornbread you ever put in your mouth.
